"Tag, I'm IT!!!"

Carol, over at The Gardener has tagged me to answer eight questions....  there are always fun... and I'm always willing.. so here goes!!!

1.  Is there any one thing in life you still long to do?

Hell... there's a bunch of things I want to do... I guess it depends on the mood I'm in at the time.  I still need to get back to Monument Valley... or Moab, Utah... or Sedona, AZ. I have some unfinished business there. I wish I had been more tuned into this area earlier in Life, but then again, things happen on their own time frame.

2.  What makes you sad?

Ohh.... knowing that I will never ever see my Mother or Dad again.  If I could have had another fifteen minutes with each of them, the fact is that Mom would still have been gone 30 years... and Dad 15 years.  I do miss them so... each and every day.

3.  When you think back over your life so far...what is the one perfect day that stands out in your mind?

I'm going to have to claim two such days... the days of the births of my daughter and of my son...

4.  Who is your favorite person to be with?

No names yet... but there is someone's company that I do enjoy.

5.  Do you keep or tell secrets?

They are secrets!!! One doesn't tell secrets!!!!!

6.  What kind of music do you listen to the most?

Well... mostly classic rock... if you are going to press me for bands, you are out of luck because I tend to listen to a whole bunch of everything!  Due to a recent post by Carol, I'm listening to Creedence Clearwater now...

7.  Eggs and bacon or French toast and waffles?

It depends... eggs and bacon are really good somedays... French toast AND waffles sound redundant... now, French Toast and bacon? or Waffles and bacon?? Let's flip a coin... but I do like making waffles on occasion...  I wish I could get them nice and crispy though... I'm beginning to think that they aren't crispy because of the non-stick stuff... Boooo!!!!!!

I am going to try to make some pan fried potatoes like my Mom used to make... they were SO good... anyone have any ideas on how that is done???

8.  If you had one idea to share with the world what would it be?

I would encourage everyone to be kinder... nicer... less rude, and most of all, more respectful of others... I think that is the greatest  problem in our society... and in the world today... people, all in all, are mean, hateful...  And in part, I blame the increase in this type of activity on the 'reality shows'... where it seems to be 'cool' to be hurtful... spiteful... mean to others.  I don't get it.

I would like to answer one of the questions asked of Carol... it was:

What is the best thing you ever ate?

It had to be the pancakes and syrup that my Mom used to make.  They were SO good... and if I could get that 15 minutes extra with my Mom, I would ask her how she made her pancake syrup... do any of you make your own syrup? If so, share with me...

I will ask any of you to answer these questions... or return to Carol's site and answer the ones asked of her.

Thank you, Carol,  for including me in this...

  5. The trick to frying potatoes is cooking them slow over med-low heat and using a good aluminum frying pan. Non-stick pans will not brown them properly.

Heat the pan over med-low heat, then add the oil. When the oil is warm (not hot) add the sliced, diced, or shredded potatoes, onions, etc. and seasonings.

Cover the pan and cook until the potatoes are tender. Then cook them uncovered until they are browned and crispy. Using a metal spatula, scrape under the browned potatoes and turn them over. Do not turn until the potatoes are as crisp as you want. Continue cooking until the turned side is also brown, which should take just a few more minutes.

This is the technical step by step of how I cook fried potatoes and they always turn out great.
